Ingredients

tablespoons of Turban Chopsticks Thai Green Curry Paste

soft or crispy taco shells
4
cups of diced mushrooms of your choice
Shredded salad eg lettuce, cucumber, tomato

sliced avocado
1/2
cup of Yoghurt + 1 tablespoon of Thai Green Curry Paste Coriander and chilli to garnish

Method

Sauté the Mushrooms: In a saucepan, cook the diced mushrooms in your preferred cooking oil over medium heat for about 3 minutes until soft. Stir in 2 tablespoons of Thai Green Curry Paste and cook for another minute. Season with salt and pepper.

Prepare the Sauce: In a small bowl, mix 1/2 cup of yogurt with 1 tablespoon of Thai Green Curry Paste until well combined.

Assemble the Tacos: Warm the taco shells if desired. Fill each shell with the sautéed mushrooms, followed by a generous amount of shredded salad and slices of avocado.

Garnish & Serve: Mix 1/2 cup of yoghurt with 1 tablespoon of Thai Green curry paste and drizzle over salad then garnish with coriander and chili. Enjoy your quick and delicious Thai-inspired tacos!

Tips

Soak wooden skewers in water for at least 30 minutes before threading the ingredients into them.
