One-Pan Vegetarian Nasi Goreng Traybake
Serves: 4 - 6
Prep & Cook: 45mins
Ingredients
2 tbsp
olive oil
300g
mushrooms, roughly chopped
1
brown onion, finely diced
3 tbsp
Turban Chopsticks Nasi Goreng Paste
2 cups
uncooked long-grain white rice
3½ cups
hot vegetable stock
1 cup
frozen shelled edamame
4
eggs
To serve
2 spring onions, sliced 1 Lebanese cucumber, sliced 1 cup cherry tomatoes, halved 2 tbsp roasted peanuts, roughly chopped Fresh coriander (optional) Crispy shallots (optional)
Method
1
Preheat the oven. Set your oven to 200°C (180°C fan-forced).
2
Mix it all together! In a large, deep baking dish, combine the mushrooms, onion, olive oil, Turban Chopsticks Nasi Goreng Paste, uncooked rice and hot vegetable stock. Stir well, making sure the rice is submerged.
3
Bake until fluffy. Cover tightly with foil and bake for 35–45 minutes, until the rice is tender and most of the liquid has been absorbed. Stir in the edamame during the last 10 minutes of cooking, adding a splash of hot stock if the rice looks dry.
4
Add the eggs. Once the rice is cooked, make four little wells in the rice and crack an egg into each. Return to the oven, uncovered, for 6–10 minutes, or until the eggs are cooked to your liking.
5
Top and enjoy! Finish with fresh cucumber, cherry tomatoes, spring onions, crunchy peanuts and coriander. Serve straight from the tray!
