One-Pan Thai Red Curry Dumpling Bake
Serves: 3 - 4
Prep & Cook: 25 mins
Ingredients
2 tbsp
Turban Chopsticks Thai Red Curry Paste
1 can (400ml)
coconut milk
1 tbsp
tamari or soy sauce
1 tsp
sesame oil
2
garlic cloves, minced
1 tsp
freshly grated ginger
1 pack
frozen vegetable dumplings (approximately 12 pieces) – try Mushiki Vegetarian Gyoza or Lamyong Vegetable Dumplings, available from La Vida Vegan
1–2
handfuls of kale, baby spinach or bok choy
1 tbsp
water, if needed to loosen the sauce
Method
1
Preheat the oven. Set your oven to 200°C (180°C fan-forced).
2
Make the curry sauce. In a medium baking dish, combine Turban Chopsticks Thai Red Curry Paste, coconut milk, tamari, sesame oil, garlic and ginger. Whisk until smooth and well combined.
3
Add the dumplings. Arrange the frozen vegetable dumplings in a single layer in the curry sauce, spooning a little sauce over each one.
4
Add your greens. Tuck the kale, spinach or bok choy around the dumplings, making sure they're lightly coated in the sauce.
5
Bake until bubbling. Cover the dish tightly with foil and bake for approximately 15–20 minutes, or until the sauce is bubbling and the dumplings are piping hot and cooked through. Follow the dumpling packet's cooking instructions and extend the baking time if required.
6
Garnish and enjoy! Remove from the oven and finish with fresh coriander, toasted sesame seeds, a squeeze of lime and a little fermented chilli or chilli crisp if you like extra hea
