One-Pan Nut-Free Satay Noodle & Dumpling Bake
Serves: 3-4
Prep & Cook: 20-30mins
Ingredients
1
Turban Chopsticks Nut-Free Satay Curry Sachet
1 can (400ml)
coconut milk
1 tbsp
gluten-free tamari sauce
1 tsp
sesame oil
2 blocks
dried noodles (approximately 150–180g), suitable for baking
12
vegetable dumplings, fresh or frozen
2 cups
chopped vegetables (broccolini, snow peas, bok choy or baby spinach)
½ cup
water or vegetable stock, plus extra if needed
To finish
1 spring onion, finely sliced 2 tsp sesame seeds Fresh coriander (optional) Lime wedges Chilli oil (optional)
Method
1
Preheat the oven. Set your oven to 200°C (180°C fan-forced).
2
Make it saucy! In a large ovenproof baking dish, whisk together Turban Chopsticks Nut-Free Satay Curry Sachet, coconut milk, tamari, sesame oil, lime juice and water until combined.
3
Add the good stuff. Nestle the noodles, vegetable dumplings and chopped veggies into the sauce, making sure the noodles are mostly submerged. Add a little extra water if needed.
4
Bake until bubbling. Cover tightly with foil and bake for 20 minutes. Carefully remove the foil, stir and separate the noodles, then bake for another 5–10 minutes or until the noodles are tender and the dumplings are completely cooked through. Add a splash of water if the sauce becomes too thick.
5
Finish and enjoy! Scatter over spring onions, sesame seeds and fresh coriander. Add a squeeze of lime and a little chilli oil if you like extra heat. Serve straight from the dish!
