Creamy Thai Yellow Curry Tempeh Bowls
Serves: 3 - 4
Prep & Cook: 20-30mins
Ingredients
300g
plain tempeh, cut into bite-sized pieces
2–3 tbsp
Turban Chopsticks Yellow Curry Paste
400ml
coconut milk
½ cup
vegetable stock
1 tbsp
gluten-free tamari
1 tbsp
neutral cooking oil
1 bunch
baby bok choy or your favourite Asian greens
1 cup
green beans and corn spears mixed
1 cup
uncooked jasmine rice
Method
1
Cook the rice. Prepare jasmine rice according to packet instructions and set aside.
2
Golden up the tempeh. Heat oil in a large frying pan over medium heat. Add tempeh and cook for 4–5 minutes, turning until lightly golden.
3
Make it creamy! Add Turban Chopsticks Yellow Curry Paste, coconut milk, vegetable stock and tamari. Stir until combined and bring to a gentle simmer.
4
Add your greens. Toss in the bok choy and green beans. Simmer for 5–7 minutes until the veggies are tender and the tempeh is heated through.
5
Serve and enjoy! Spoon the creamy yellow curry over fluffy jasmine rice. Finish with spring onions, fresh chilli, coriander, a squeeze of lime and a drizzle of chilli oil.
