Creamy Satay Tofu & Veggie Stir-Fry
Serves: 3–4
Prep & Cook: 20 -25mins
Ingredients
1 cup
uncooked brown rice
400g
firm tofu, drained and cubed
3-4 cups
of your favourite veggies. We used broccoli, snow peas, capsicum, carrots.
½ cup
roasted cashews
3 heaped tbsp
Turban Chopsticks Satay Peanut
½ cup
coconut cream, plus extra if needed
1 tbsp
olive oil
1 tsp
freshly grated ginger
1
clove garlic, minced
Method
1
Cook the rice. Prepare brown rice according to packet instructions and set aside.
2
Crisp up the tofu. Heat oil in a large frying pan or wok. Add cubed tofu and cook for 5–7 minutes until lightly golden. Remove and set aside.
3
Stir-fry the veggies. In the same pan, add garlic, ginger, broccoli, carrots, capsicum and snow peas. Stir-fry for 5–7 minutes until tender-crisp, adding a splash of water if needed.
4
Make it saucy! Turn the heat to low. Add Turban Chopsticks Satay Peanut and coconut cream, stirring until smooth and creamy. Return the tofu to the pan and toss everything together until beautifully coated and heated through.
5
Serve and enjoy! Spoon over warm brown rice and finish with roasted cashews, fresh coriander and sliced chilli for an extra kick.
