Juicy mushrooms and hearty lentils are tossed in our flavour-packed Turban Chopsticks Butter Chicken Curry Paste, then tucked into warm, fluffy pitas with crunchy cucumber, tangy pickled cabbage and a generous drizzle of creamy vegan tzatziki.

Ingredients

300g
mushrooms, finely chopped
1 can (400g)
brown lentils, drained and rinsed
1
onion, finely chopped
2–3 tbsp
Turban Chopsticks Butter Chicken Curry Paste
½ cup
coconut cream
1 tbsp
Olive oil
4
pita breads
1 cup
cucumber and pickled red cabbage (each)
½ cup
vegan tzatziki

Method

1
Cook the filling. Heat olive oil in a frying pan over medium heat. Add onion and mushrooms, cooking for 5–7 minutes until softened and any excess moisture has evaporated.
2
Make it saucy! Stir in Turban Chopsticks Butter Chicken Curry Paste, lentils and coconut cream. Simmer for 5 minutes until rich, creamy and heated through.
3
Warm the pitas. Lightly toast or warm your pita breads, then spread with a generous spoonful of vegan tzatziki.
4
Load them up! Fill each pita with the creamy mushroom and lentil mixture, crunchy cucumber and tangy pickled cabbage.

Tips

Make it extra hearty! Add a handful of baby spinach to the curry filling for even more veggie goodness.

Love a little crunch? Try shredded carrots, lettuce or fresh red cabbage.

Not a mushroom fan? Swap the mushrooms for extra lentils or crumbled firm tofu.

Make it gluten-free! Simply swap regular pita bread for your favourite gluten-free vegan flatbread and check that all packaged ingredients are gluten-free.

Meal prep magic! Make the butter curry filling ahead of time and keep refrigerated for up to 3 days. Warm it up and assemble your pitas when you're ready to eat!
